Texas Roasted
Pork Loin
1 1/2 pounds port tenderloin (boneless)
1 tsp Liquid Smoke
4 ozs. Sherry
Marinate the tenderloin in the combined liquids
in the refrigerator for 6 hours. Remove the pork from the marinade
and rub the surface of the meat liberally with Texas Traditions Gourmet Seasoning Blend.
1 Tbs. Texas Traditions Mesquite Smoked Mustard
1/4 cup Texas Traditions Mesquite Bean Jelly
1 Tbs. brown sugar
Combine these ingredients to form a paste. Roll
the pork loin in the paste. Then coat the meat with additional
Texas Gourmet Seasoning Blend. Place the pork on a roasting rack
in the oven and roast in a pre-heated 275 degree oven until the
pork has an internal temperature of 155 degrees.
Let stand for 20 minutes and slice crosswise into
thin medallions. This recipe makes about six 4-ounce servings. |
