Teresa's Homemade Pimento Cheese Spread
2 c. (8 oz package) of Colby/Monterey Jack finely shredded cheese
Approximately 1/4 to 1/2 cup of mayo
4 oz. jar of diced pimentos (drain some of the liquid)
1 - 2 tablespoons of Texas Traditions Jalapeño Ranch Dip Mix
Blend all ingredients together. Add a small amount of grated onion (optional). Refrigerate 6-8 hours. Serve it with crackers or as a sandwich spread.
