Spicy
Pimento Cheese Ring with Red Chile Pepper Jelly
2 16 oz. pkg. Kraft Mild Cheddar
Cheese - grated
2 4 oz. jars diced pimentos
1 to 2 tsp. sugar
Salt & Pepper to taste
Cayenne Pepper to taste
Mix with mayonnaise to proper consistency for pimento cheese.
Stir all together until well mixed. Spray a ring
mold with Pam and pack the pimento cheese into the mold firmly.
Cover the mold with foil and freeze.
About three hours before you plan to serve, remove
the mold from the freezer. Take a sharp knife and loosen around
the edges and around the center of the ring mold. Unmold (it should "pop" right
out) onto a tray lined with lettuce leaves. It takes about three
hours for it to thaw out to spreading consistency. Just before
putting it out on your serving table, fill the center of the ring
with Texas Traditions Red Chili Pepper Jelly.
I serve this with Bagel Crisps which are available
in small bags in the Deli section of the H.E.B. grocery stores
in San Antonio. They come in different flavors and I prefer the "Everything" flavor,
however I have also served
this with the Garlic flavored Bagel Crisps.
Be sure to tell your guests to combine a bite
of the spicy pimento cheese with a small dab of the jelly. It
is delicious and looks very pretty on the table - especially at
holiday time.
