Red Chile
Pepper Glaze for Chicken
1/3 cup Texas Traditions Red Chile Pepper Jelly
1 Tbs. ketchup
Splash of Balsamic vinegar
1/2 tsp coarsely ground black pepper
1/8 tsp salt 1 whole chicken, rinsed and dried (3-4 pounds)
In a small bowl, combine all ingredients except
chicken until well blended. Place chicken in roasting pan; brush
with glaze. Cook at 350 degrees, brushing with additional glaze
every 15 minutes, until chicken is deep-golden brown and chicken
juices run clear; 1 hour to 1 hour and 15 minutes.
